To start with about the dough - The stuffed parantha dough needs to be soft. It should roll easily without you having to apply too much pressure. Since applying pressure can tear the parantha. I highly reco using whey/milk to knead parantha dough.

The next important point is the temp of stuffing. Your stuffing needs to be at room temp, not cold, not hot. Especially not hot, since it will steam & might break it while rolling.
