Day 2 of #LockdownCooking: Chicken Tagine with Chickpeas (No Mint). Served over millet. This recipe is very forgiving on proportions and substitutions. I generally double the spices. I also mix in a little honey before adding the chicken.

Day 3 of #LockdownCooking: Mom's Mushed-Up Hamburger (ground beef, parsley, shallots, salt) and "Shelter" Cabbage (cabbage, olive oil, garlic, salt). My oldest & newest go-to comfort foods. The latter recipe is from the cook at the family shelter where I volunteer. #CookingForTwo
Day 6 of #LockdownCooking: Chicken & Vegetable Stir-Fry. Almost no cooking this weekend as 1) we realized yesterday our favorite local pizza place (Victor's Pizzeria on Polk) was still open and we wanted to support them and 2) I worked until too late today to start a proper meal.
Day 8 of #LockdownCooking: Easy Chili & Cornbread. 1 lb ground beef, chili powder, 1 onion, 1 bag frozen sliced peppers, 1/2 bag frozen roasted corn, 1 can kidney beans, 1 small can green chiles, 28oz diced tomatoes. Jiffy corn muffin mix w/ added chives & cheese. #CookingForTwo

Day 18 of #LockdownCooking: Stock with the bones of last night's chicken. We have leftovers for days—so much so I missed a day somewhere in there and am correcting here—but I thought I should up my supply of stock, which I seem to use in almost every recipe I make. #CookingForTwo
Day 23 of #LockdownCooking: Chicken Stew à la Vortex, a reference only some will get. Brown chicken thighs, then sauté mirepoix and Scarborough Fair herbs. Add chicken back to pot, cover with water, and cook long and slow for 2 hours. Shred meat. Thicken for stew. #CookingForTwo
Day 30 of #LockdownCooking: Tonight I made another version of Day 7's pork, cabbage, and apples. Got in touch with my polish roots and used Penzeys' Horseradish Dip to finish. Day 48 of #LockdownCooking: Chicken Gigi. A throwback to living in Paris with La Belle Chantal. Essentially basic roast chicken, but stuffed w/ Boursin cheese, basted w/ melted butter & tarragon, and roasted at 350 with a ½ cup of white wine in pan. The resulting sauce is heaven.
Day 65 of #LockdownCooking: Shrimp Scampi (Ina Garten) over Rosemary Roasted Potatoes (Jamie Oliver). Why? Well, I had no linguine but many, many potatoes. Used bacon fat instead of goose fat for the potatoes. A better combo than I imagined. #NecessityIsTheMotherOfInvention
Day 74 of #LockdownCooking: Amplified Chicken Soup, or what happens after 2+ months of shelter-in-place when you have caldo de pollo in the freezer and realize you need to use or lose a carrot, celery sticks, chopped kale, picked-over roast chicken & pot liquor from making chili.
Day 127 of #LockdownCooking: Got fresh kielbasa sausages at the Ferry Building farmers market and, per the recommendation of the vendor, roasted veggies (potatoes, brussels sprouts, carrots) at 425 and simply placed sausages over them ~20 minutes before finishing. Perfection.
