It's absurd to me the pedestal that Italian food is put on in the US. You can order the shittiest pasta of your life with a prepackaged german bratwurst in it as the "italian sausage" and it's like $14 minimum but the most delicious fried rice is like $8 max
I think a lot about cullinary cultural bias and how "Asian" food is considered lesser to a lot of people. And how Tacos are an incredible food but you'll almost never see a fine dining place with like a $100 taco even though it would prob be better than a $100 steak
America loves to jerk off Italian and French cuisine but so much of the food that other countries and cultures make are incredible and just as deserving of fine dining but the common perception limits that
