I have SO MANY deeply informed opinions about kitchen labor. But I'm in group chats for those, because frankly Twitter is exhausting.

Independent places are getting ground to fucking paste fr, and we're helping one another fill gaps until they can afford to hire better.
Understand that with a certain caliber of business it's not that they don't want to pay wages, it's that adding health insurance cripples them.

That is a fail of govt, not the business owner, frequently.

But an indie restaurant owner isn't a McDonald's franchisee.
And it gets very difficult - *FOG HORN*

If I feel like getting even into 20% of it, I'll pitch an article.

Pay your fucking labor. UBI and M4A are crucial to any food culture surviving here.
*narrator voice*

But billionaires don't care about culture, so those restaurants and people died. The billionaires felt nothing.
As an addendum, I want to make clear that the chefs and owners I'm talking with are often SO STAFFED they're helping people file for unemployment and shit.

Like, they're scouring for signs to find people who may need help is because they have SOME time.
And yes, they can call another expensive asshole like me to cover their line and I'll do it for a flat fee. Times are times. But they're looking for full time employees that they want to care for. Either they can afford the insurance, or they're refusing to pay sub par wages.
And this discussion is being left out entirely.

But also, fast food (which, reminder, I have a history of respecting the hell out of) workers are fighting back against the same monster, but their win will not be a part of the restaurants I work in.
We have no answers. But we can outline the problem in gory detail, and the problem is NEVER "people don't want to work."
