every time i think about people’s restaurants or people’s canteens enough i do start crying. its just so beautiful. getting to go and eat with your friends and neighbours and nobody is barred by their ability to afford it. we can all commune around food together.

i love love love the work i do. i love making croissants and breads and tarts and pastries. and i don’t feel guilty about the food i make being kinda fancy because i know that there is no reason for it to be a luxury and that we are fighting for a world where everyone gets this

i want everyone to have a delicious cake on their birthday to share with loved ones. i want everyone to enjoy a croissant and a latte in the sunshine on a beautiful morning. such a world is possible
