Here is a French label that has been doing a lot of amazing releases in Asian Cinema. Especially on the Hong Kong action front. Here are the current and future releases by @SpectrumAsie. In this very thread, I'll add tips on how to order and some pointers on adding your own subs.
Due to rights issues, @SpectrumAsie releases do not contain English subs only French ones. With that out of the way here are some highlight releases by them.

Upcoming Highlight releases.
Johnnie To's "Barefooted-Kid(1993)" What makes this release special is that it contains the original dub just like the Celestial DVD. Unlike the digital releases that only have the Mandarin dub. Comes out on June 29, 2021
Guan Hu's award-winning Crime Drama "Mr. Six(2015)" This release will also include his 2009 film "COW" If you have never seen Mr. Six you are in for some OG gangster shit. Comes out June 28, 2021.
Alex Cheung's "Man On The Brink(1981)" If you are a fan of Infernal Affairs you will love this film. Comes Out June 28, 2021.
For September we got "Bastard Swordsman & Return Of The Bastard Swordsman" Not 100% sure if this will be bundled together or sold separately. Once again they are including the rare Cantonese Dub, not found in the Celestial DVDs or digital copies.
Another gem for September is "Holy Flame Of The Martial World and Demon Of The Lute"

For 2022 they have Ringo Lam's Burning Paradise, Alex Law's Painted Faces, Taylor Wong's Rich and Famous, and The sequel Tragic Hero.
Ordering from their website is very easy. You can do it by letting your browser translate, or highlight the keywords and Google translate.
If you want to add English subs you are going to need a Blu-Ray drive(USB or eternal)Free software like MAKEMKV and Handbrake to compress the file. Bonus program MKVToolNix to add SRT file(Subtitle file)to your MKV file. All these are free.
You can find the subs for all these films on websites like Subscene, Open Subtitles, and Movie subtitles. The best thing I can tell you with Handbrake is to set it to 23 RF, Fast 1080p, Audio AAC Passthrough, and subs pick it manually and unclick forced and you are good to go.
