What caught my attention was the serving of the famous Iraqi dolma (stuffed vegetables) and the making of kubba/kibbi in Iraq. Dolma is a luxury dish as it takes time and effort to make - kubba as well. Not a dish made by on-the-run militants! 2/

I was also impressed by the making of ma'mool (cookies filled with dates,nuts) & qatayif (typical Ramadan dessert) in Syria. I feel it's too early to make ma'mool, mostly reserved for Eid, but when you're on the run, I guess you have to seize the opportunity when you can! 3/
