I'm sure we've all heard "Daft Punk just pushes buttons" to dismiss the talent of Guy and Thomas

Daft Punk has always been quiet to not articulate the "magic" that goes into making their music, but it's worthy to know that they don't just "press play" when they perform (thread)
I am borderline incompetent when it comes to audio engineering and equipment so I will just be documenting and using information from people that know about the process. Will go in chronological order in their career. Will be focusing on their live sets and album equipment.
Homework

TB: “In the first step, when making music with hardware, [the signal] goes through the mixer and the compressor and is recorded on the DAT. After that, effects are put on the sound source before going into the mixer to be recorded. We don’t use the AUX on the mixer.”
“The second step is directly putting the sounds from the DAT into the S-760 sampler and editing/cutting the two tracks into however many pieces, like hard disk recording.

“Lastly, we recorded it directly from the S-760 to the DAT. From here we do the rest with the Macintosh.”

Wurlitzer 200A – Electric Piano

GM: "On 'Digital Love,' you get this Supertramp vibe on the bridge. We didn't sample Supertramp, but we had the original Wurlitzer piano they used, so we thought it would be more fun to have the original instrument and mess around with it."

Alive 2007

This is where things get dicey. Way too many accusations of Daft Punk just hiring two guys to press play on a playlist. Probably all claims out of jealousy.
Interestingly, part of Daft Punk's Alive 07 sets was sequencing songs on a software! But that's obviously nowhere near all they do.

Here is Thomas giving his thoughts on Ableton Live 7 in 2007.

The famous "I love dirt" quote comes from this.
Customized Super Computer

DP use 2 custom designed super computers to run Ableton Live and to interact with their MIDI controllers and synths.
JazzMutant Lemur

The main purpose for the Lemur in their set up is to control Ableton. This includes dropping samples, changing scenes, adding effects and controlling loop stations.
The Lemur's are also connected to their lighting rig and pyramid stage, through the Lemur the lights can be set up similarly to to the scenes in Ableton live, and the images on the screens of the pyramid can be effected in such a way that reacts directly to the music.
MiniMoog Voyager RME

”We can mix, shuffle, trigger loops, filter, distort samples, EQ in and out, transpose or destroy and deconstruct synth lines. We keep some surprises on the side too!” Thomas Bangalter on the MiniMoog Voyager RME
Behringer B-Control Rotary BCR2000

The BCR2000 is a basic MIDI controller which can be assigned to control different effects, synthesizers and to trigger loops etc. Daft Punk use two of these MIDI controllers to control their effects like with their other controllers.
Tron: Legacy

The OST was mainly made using an orchestra

Daft Punk was also having an experimental phase with with music software in which they were noted to not like

Interestingly, they undoubtedly used FL Studio presets on Derezzed

Conway Recording Studios
Gang Recording Studio
