As someone who works in animal care, yes sometimes you fucking do.

Don't know where the idea that every dog is perfect came from

This type of sentiment comes from someone who's never dealt with an actual problem dog that doesn't match your capabilities https://twitter.com/jacobdotgov/status/1390186466731462659
You never know how a dog is going to act when you take them home, you have to trust completely in the shelter or agency you adopted from, and even then, the stress of shelters causes dogs to behave differently than they normally would.
I am a professionally trained, degreed, certified animal health and handling professional.

2 Years ago after waiting for years, I finally adopted a dog with my partner. We cleared everything with the rescue, she was a beautiful perfect angel when we picked her up.
Then, after a week, we left her alone for the first time. and she LOST HER MIND. Panicked for the entire 10 minutes we were gone

No problem, we'll take it slow

No improvement

No Problem, we'll try anti-anxiety medication

No improvement

2 months and $2000 later no improvement
She had SEVERE separation anxiety, and could not be left home alone for even 10 minutes. Obviously we have to work, both of us in person. Medication had no effect, training had no effect.

It was so bad she chipped the tip of her tooth when we had to run to the store once
Eventually, heartbreakingly, we decided to surrender her again, kept her another week, until her new owners came.

They lived with their family, including 3 adults who were home all day and they had a pitty my sweet baby ADORED.

They were the perfect home for her, we weren't
Not everyone has the ability to shift their life around to accommodate that even as much as we did.

So fuck off with this shit
A year later we tried again and found our perfect sweetest angel Beautiful Baby Boy Bruno Bucciarati, whom the shelter claimed was "a bit of a problem because he was jumpy and bitey"

And I kid you not, he is near perfect, I love him with my whole being
