You probably don't know I'm a classically trained chef. My food style is home-cooked comfort you can easily make with a drink in hand.
So here are 10 random recipes and food tips that have sustained me and my family throughout quarantine.

Blood Orange Whiskey Sour
First, we need a drink. Get some Old Grand-Dad ($20!).
• 2 oz bourbon
• 1/4 oz maple syrup
• Juice of 1/2 blood orange
• Juice of 1/2 lemon
Stir well. Add ice.
Why maple syrup? I'm too lazy to prepare simple syrup. Plus, maple is more fun.

Beef Noodle Stir Fry (for 2)
Marinate tenderloin steak in a splash of soy sauce & lemon juice. Lots of garlic, obviously.
Then cook it with veggies & noodles, along with sauce:
• 1/4 c soy sauce
• 3 T oyster sauce
• 3 T beef stock
• 1 t sesame oil
• 1 t brown sugar

Pork Chops
Not feeling beef? No prob. Let's saute some pork chops.
Season with:
• Garlic powder
• Onion powder
• Paprika
• Oregano
• S&P. Lotsa pepper.
Blob of tallow (or ghee) into your cast iron, medium heat. Saute the chops until just done, ~3 min each side.

Halibut w/ Cherry Tomatoes
Or let's have fish! Season halibut with S&P.
Add tallow to your pan, medium heat. Saute ~3 min each side.
Don't be scared about it sticking; the fish will release when ready.
When done, saute halved cherry tomatoes with a splash of red vinegar.

Random Salad from Leftovers
Time for veggies! This is a salad I combined from Panera Bread greens + roasted Brussels sprouts from another cafe.
How to make a salad that doesn't suck:
• Add salt
• Mix fresh greens w/ 1-2 roasted veg
• Add texture (seeds, cucumber, tomato)

Healthier Buffalo Wings
No oil, no air fryer.
Oven at 425°. Line a baking sheet w/ foil. Wire rack on top.
Toss 1lb wings in:
• 1 T baking powder
• 1/2 t garlic powder
• 1/2 t salt
Roast on rack for 45 min, flipping wings halfway. Toss in Frank's Red Hot + melted butter.
No oil, no air fryer.

I like Q Ginger Beer because they come in small cans. They're easy to deal with if you're making only 1 mule.

• 2-3 oz mezcal (or vodka, if you're a purist)
• Juice of 1/2 lime

Thai Chicken Curry
I'm staring at this pic but can't remember the recipe.
Brown chicken, set aside.
Saute onions & bell peppers. S&P, pinch of coriander. Grate ginger if you have. Can of coconut milk. 3 blobs red curry paste. Chicken. Chard or kale. Boil, simmer, 20 min.

All meat should be browned — as in sauteed/caramelized on the outsides.
Don't you dare add raw meat to a simmering stew or braise.
The only exception to this is hot pot or shabu shabu.

If you're still here, you deserve this: based on the noods at Crustacean in LA.
~18 oz cooked pasta
4 minced garlic cloves
1 T oyster sauce
1 T fish sauce
2 t soy sauce
2 t sugar
1/4 t pepper
1 stick melted butter
In a wok, toss pasta in mix. + Crab if you can.

Sous vide a filet mignon. Throw it in the cast iron to brown the outsides. Perfect medium rare.
During the last 3 min of cooking, add the shrimp which was just tossed in lemon juice, glug of olive oil, garlic, S&P.
