Making salmon today!
Okay we gone try this again i was depressed
For the filling you gone need spinach, cream cheese, fresh dill, sage, garlic powder, onion powder, Adobe (if you like) white pepper, Thyme and rosemary, 1 large chopped onion, 1 -2 shallots, butter, heavy whipping cream or milk and bread crumbs
You gonna melt the butter on medium in a sauce pan then put in onion and shallots, wait until almost translucent, add chopped garlic and then wait until translucent to add other ingredients
Once the onions and shallots are trasncluent you gonna add your spinach to cook it down, i used almost two full bags of baby spinach you don’t have too i just want a lot of spinach in my filling, you gonna cook it on low with a top covering it you add a lil water if you wanna
You can also chop the spinach if you want but i didnt cause I’m hungry so i just threw that bitch in there
I forgot to say you also gonna use fresh Parmesan cheese, when making any kind of cheese sauce you always wanna use at least 2 cheeses!
Here’s the cream spinach filling, now I’m about to prep the fish and we are almost done!
You gonna preheat your oven to 350 at least and for the fish (to feed 4) you gonna need 2 4 oz salmon filets, old bay, Cajun seasoning, chili powder, paprika, a lil white pepper and a lil salt, as well as make sure your puff pastry is thawed at this point
I got this salmon form Aldi’s! You gotta descale it and it’s fresh so i think it’s worth the hassle, you descale it by running a knife along the skin repeatedly until scales stop coming up
Okay so there was a mishap with the puff pastry this brand didn’t have the separating sheets so it melted together so i just remolded them so i cam put the salmon and the filling in it
You just put the salmon in the puff pastry after it’s cleaned and seasoned (make sure you pat dry salmon before seasoning) add filling on top then seal salmon inside pastry use egg wash to help seal and finish (i was outta eggs so i used butter!)
You gonna put your put that all in an over in a greased ban or baking sheet at 350 for a bout 30 min and it should be ready!
