The first one is the one a lot of people talk about, for good reason:
Gratitude journaling!
But how can you get into the habit?

The trick is to not overcomplicate it:
Ideally in the morning, take a couple of minutes and write down things you are grateful for.
Everything goes. Feel free to start with 'small and obvious' things like waking up

Bonus point: If you are in a relationship, write down something you are grateful for about your partner in addition

I have a mug, that reminds me to be grateful for my relationship.
Every time I have some tea I get reminded automatically.
You can assign this meaning to everything - give it a try.

So as a quick summary:
1 - start your day with gratitude journaling
2 - end your day by asking why the day was special
3- assign meaning to things you use and take them as reminders to be grateful
