This chicken based recipe originates from the Basque Country. It consists of chicken in tomato sauce with bell peppers and with piment d’Espelette, the local spicy pepper from the region.

Pissaladière is a pizza-like dish from Provence (with origins from Northern Italy, I believe) It is made with a simple dough, onions, anchovies and black olives. It’s great to eat as a starter in the summer.

V. Raclette
No winter season is complete without having at least eaten one Raclette! It is a very convivial mountain dish. People gather around la machine Ă raclette, melt their cheese in it, pour it on top of their potatoes and eat with cold meats and pickles.

As it name suggests, this salad comes from Nice, in southern France. It is the ultimate summer salad. What’s best about it is the runny soft boiled egg on top, the tuna and the anchovies. You usually eat a large plate of it as a main course.

Or in Alsatian dialect Flammekueche. It is an Eastern French/German pizza-like dish. A simple dough, crème fraîche, onion and bacon. Ganz gut!!

A trip on the Atlantic coast wouldn’t be the same without those mussels cooked in garlic and white wine, and eaten with French fries. You need to eat with a view on the ocean to fully appreciate them.
