Viruses only mutate when the replicate. Vaccines prevent viruses from getting into new hosts. Even when they don’t completely block infection they tend to limit the replication BY A LOT
In fact, even when vaccine breakthrough infections do happen the vaccinated people tend to produce too little virus to allow the virus to spread between people
