A lot of practice, patience, and quite frankly failure in order to find the number. People have spent a lot of years of bad science trying to explain it away, while others have tried to force feed that concept as though calories happen in a vacuum.
Long story short, calories matter more than just about anything, but loads other stuff could be affecting that bottom line.
