The crew don't really "reject" ideas. In concept, Ryan and Min started out as bank robbers in the old west. Owen also talks about characters "crossing dimensions", "living out of phase with each other" and falling in love with a stranger by watching their tapes
Even if they knew it was the last season, they wouldn't have changed Book 4. It was a reaction to Book 3. It was the story they wanted to tell.
Depending on the scene, the number of arms the Steward has varies. Such is the magic of animation, folks!

The themes of Book 4 are "relationship maintenance and communication or lack thereof". Also "artistic endeavors versus the reality of creativity", and how relationships take work
Owen says they got to do every car they wanted, but wishes some characters said or felt something different, but it was sometimes difficult with the limited production timeframe
It's possible to get on the Train multiple times. There are cars with food on them but only one toilet car.
Ryan is named after Ryan Pequin, storyboard artist on Books 1 and 2 before leaving the show to work on Summer Camp Island
The boots were standard issue for passengers before Amelia's takeover. Simon's boots were modified, but Owen doesn't say how
Owen has been working on new projects that he can't talk about. He specifies that they're adult non-comedy animated movies and tv shows
Simon's death, Lake and Mace's argument and the bathroom scene in Book 4 are Owen's favourite scenes

The script for Book 5 is fully written. Owen won't release it because there's always a possibility the show could continue somehow
They wanted to set a story parallel to Amelia taking over the train, presumably partly to act as a set-up for Book 5
Owen says Cartoon Network passed on the Infinity Train movie (Season 5) because they thought it didn't have a child entry point. He reiterates that maybe one day it could change, citing fan engagement as a key factor to potentially renewing the show in the future
Season 5 was going to be a movie and some storyboards were made. The crew were in the process of brainstorming characters and plots for Seasons 6 and 7 when the show got cancelled
A lot of things about the Ghoms would have been revealed in Book 5. Also, answering as to whether or not the ghoms are edible, Owen links to... a gif of Danny Devito as the Penguin...
"The train projects a version of the train into the real world by using elements of itself". Nobody collects dead bodies off the Train, and there are possibly more rooms inside the Engine
All the cars in the train are completely random, allowing for every possibility in which a passenger can learn a life changing lesson
In an alternate reality, Owen Dennis is a pastry chef! I think we're all much more thankful he decided to create this show instead

I think they kept it this way because real progress and self betterment takes time, so it'd cheapen the idea of the train if the character got home and no time had passed
Every "This would have been covered in Book 5" is so painful. It was really going to be such a good season

Owen is already working on other projects. He worked as a storyboard artist on season 1 of Close Enough last year, which was created by JG Quintel, who originally hired Owen as a writer and storyboard artist for Regular Show.
Production itself wasn't affected too badly by the pandemic, but the crew didn't get the chance to have a proper goodbye in person
Let's hope the pandemic can end soon so we can all get back to doing the things we love, as best as we can do them
Owen says that if you're making a pilot episode, make one where the characters and world are all established. It's better than having a pilot where everything is being introduced
Your interpretation of the characters and the show is what matters most, not what happens before or after the stories. However you interpret the show is completely valid
