Reading about the ships which tracked Apollo and I found this diagram showing how they were converted, just keeping the bow and stern and replacing the majority of the hull. I know very little about building ships, does anyone know why this would be the best option?

I understand that as tankers the majority of their hull wasn't easily converted to space for crew. So why not another type of ship that would have needed a less drastic conversion?
