One of these is this millet salad enriched with fresh vegetables such as spinach, cherry tomatoes and red onion.
This gluten-free salad is perfect to serve as a single dish, as an alternative to pasta dishes or as an appetizer in practical single-serving cups. Here is the recipe!

Ingredients for 1 person

70 gr of millet

half a red onion

1 handful of spinach or baby spinach
10 cherry tomatoes

1 orange

Fresh oregano

olive oil

salt

White pepper

METHOD
Cook the millet in boiling salted water and let it cool completely; then season it with oil. Cut into wedges and peel the oranges, cut the cherry tomatoes in 4 and thinly sliced ​​red onion. Break up the spinach leaves if they are too large.
Combine all the millet ingredients, season with oil, salt, a little white pepper and a handful of fresh oregano.

TIPS

You can also add black sesame or crumbled toasted almonds, just to make the salad more crunchy.
