I bet when you talk about Vietnamese cuisine, you'll be told about Phở, bánh mì, gỏi cuốn, bún chả and nem but tbh we have much moreeeeeeeeee dishes that are also delicious. Lemme introduce you some

1. Bún riêu - Crab (rice) noodle
As its name, this noodle is served in broth and topped with minced crab. There are additional ingredients such as tomatoes, herbs, green onion, fried pork fatback etc
2. Bún bò
There are many versions basing the regions but the main ingredient is beef. It can be served with broth or dressing sauce, depends on which kind of bún bò you are having.
For the broth version, there often a piece of well cooked pork leg (the lower part of the leg)
3. Stirred rice noodle
This is similar to Korean Bibimbap. You can add whatever you like to the bowl of rice noodle and then add dressing sauce (it can be a fish sauce- based sauce or soy sauce) and kumquat juice (they often serve you a cutted kumquat to squish the juice directly
The standard bún trộn is often topped with sliced boiled pork, fried fish fillets, torn chicken, Vietnamses style meat balls, (sometimes beef slices), fried onions and garlic, vegetables and herbs
4. Miến trộn / vermicelli
It's kinda similar to bún trộn, but you replace the bún (rice noodle) with vermicelli (miến)
5. Nem cua bể /fried roll of with crab inside
They mix minced meat, shrimps and crabs with chopped herb, green onion, kohlrabi, carrot, egg, wetted vermicelli and seasonings and then wrap the mixture in rice sheet into square-shaped spring rolls and fry it until it become crispy
6. Chả cá / grilled (minced) fish (mixture)

well minced meat and fish are mixed with fish sauce, pepper, then steamed, let cool down and then deep fried. The chả cá can be eat directly or as side dish with rice (it's like sausage)
7. Chè bưởi (Pomelo sweet soup)
A dessert The main ingredient is pomelo rind. We only use the white inner part of it. It's chopped into small cubes. Those cubes would be prepared to wash of the bitter taste. The chè bưởi is chewy, sweet and sticky bcs we add tapioca starch
8. Spring rice cake
Spring rice is picked, processed and pounded into sticky form. It's served with minced steamed sweetened green beans stuffing
9. stuffed pancake (bánh cuốn)
the pancake is made from rice powder, into super thin sheets. They would stuff it with savoury stuffings (varies basing on the region). The dish is eaten with herb and vegetable (optional) and dipped into fish sauce based sauce
10. stuffed sticky rice balls / bánh trôi
We often eat this dessert on the "Cold food Day" (Tết hàn thực). It's made from sticky rice powder, stuffed with brown cane sugar cubes. We boil the balls, then cool them down in cool water and often served it with fried sesame on top
11. Bánh chưng / stuffed sticky rice cake
This is a traditional savory cake we eat on Lunar New Year.
Sticky rice is stuffed with mung beans (we remove its "coat"), pork and pepper, and then wrapped in green leaves into cubic or cylindrical shape. It's boiled for at least 3 hrs
