One of the best soups i have ever made is my chilli cinnamon butternut soup. Video:
Here is what you will need for this lovely soup:
We begin by sauteeing a lots of herbs which will lend a solid bed for flavor to be developed from. First in, some, ginger, red onion, thyme
Add the star veggie of this soup - your butternut- and then your apple, along with the spices and mix them in and allow then to simmer for a few minutes so that the flavor blossoms. I told you in the video why apples MUST be part of this recipe:
Next add your coconut milk. This will not only facilitate the cooking of the butternut till it is completely soft but will also add a mild nutty flavor which is always welcome!
Once the butternut is completely soft, proceed to blend. Blend it until completely smooth and remember you can always adjust the viscosity of your soup as per your preferrence
