some low cal recipes: a thread
hello!! thanks for clicking on this thread. I’ll be showing a few low cal recipes from some of my weight watchers books. these are only a tiny percentage of the ones I have so like / rt for part 2!! take care & tell me if you make any of these <3
01. Cinnamon rolls
126 per roll

dough
90 cal pillsbury crescent dough
butter replacement

filling
1/2 cup brown sugar
1/4 cup no-cal sweetener
1/2 tbs butter replacement
1.5 tsp cinnamon
pinch salt

frosting
1/4 cup cool whip
3 tbs fat-free cream cheese
1 tbs sweetener
preheat oven to 375 F + grease baking pan

combine filling ingredients together

whip frosting ingredients together.

roll out dough to ~ 8 x 12 in. spray / spread butter replacement. add filling and roll into a log. cut into 8 pieces

put into baking pan and cover with foil
cook in oven for 8 mins

take out oven + remove foil. cook 5 more mins

let cool 5-10 mins. add frosting and serve.

enjoy !!
002. Crêpes
1 crêpe is 57 cals. makes 8 servings

ingredients:

1/2 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup fat-free milk
2 large eggs, lightly beaten.

step one
combine dry ingredients in a bowl + wet ingredients in another. whisk together
let mixture sit for ~15 mins.

coat skillet with cooking spray and put on medium-high heat. put 1/4 cup batter on the skillet and roll skillet so the batter evens out. cool for about 1 - 1.5 mins, then flip crêpe and cook for another 15-20 secs.

eat w/ topping of choice !!
003. spinach stuffed mushrooms
87 per mushroom

ingredients

10 oz spinach, washed + no stems
1 large egg
2 tbs plain bread crumbs
1 tbs fat-free milk
1 tsp fresh oregano
pinch salt
pinch pepper
pinch nutmeg
4 large mushrooms, stems removed
cheese (optional)
preheat over to 400 F, and spray a baking sheet with baking spray

heat spinach in large skillet for 2-3 mins on high heat. transfer to cutting board and chop them into smaller pieces

combine spinach in a bowl with other ingredients (excluding mushrooms)
bake mushrooms top up for 5 minutes, then take out and add your filling. bake for another 15 mins.

let cool & enjoy !!
004. cheese crisps
25 per crisp
1 cup part-skim mozzarella cheese
2 tablespoons parmesan
1 tablespoon all-purpose flour

steps

preheat oven to 400 F. spray 2 baking sheets

combine ingredients in a bowl. drop tbs size cheese mixture on the baking sheets, ~2 inches apart.
cook for 5-7 minutes.

remove from oven and let cool.

enjoy !!
005. orange onion salad
90 for 1/4 salad

ingredients

1 tbs orange zest
1.25 cups orange juice
4 tbs lemon juice
4 tbs lime juice
1 tbs balsamic vinegar
.5 teaspoon dijon mustard
pinch salt
1 tsp olive oil
2 cups escarole / chicory leaves
1 carrot, grated
2 navel oranges, peeled + sectioned
1/2 red onion, sliced thinly

steps

add all ingredients except onion, navel oranges, escarole + onion in a blender / food processor and pulse.

add other ingredients in a large bowl & then add dressing on it. serve
006. black bean soup
207 cals for 1/4 of the soup

2 tsp olive oil
2 onions, chopped
2 jalapeños, seeded, deveined,
chopped
1 garlic clove, minced
15 oz can black beans
2 cups low-sodium chicken stock
1 tsp cumin
1 tsp coriander
1 cup water
2 tbs dry sherry
1 tsp lime juice
pinch salt
2 scallions, finely chopped
2 tbs chopped cilantro

in medium pan, sautée onions, jalapeños, and garlic until soft. add beans, stock, cumin, coriander, & water. bring to a boil.

reduce, cover, heat & simmer for ~45 mins. remove from heat and add
sherry, lime juice & salt. remove from heat & let cool

put soup into food processed and purée. transfer back to pan and heat to preferred serving temperature.

enjoy !!
007. Thai corn soup + shrimp (🔥)
201 cals for 1/4 soup

1 tsp canola oil
3 cloves garlic, minced
1 tbs fresh ginger
1/2 tsp hot chili paste
4 cups low-sodium chicken stock
14.75 oz can of cream-style corn
8 oz frozen shrimp
2 tsp Thai fish sauce (nam pla)
1 tbs water
2 tsp corn starch
1 tsp sugar
1 tsp dark sesame oil
1 large egg, lightly beaten
1/4 cup chopped cilantro
1/4 tsp paprika

in large pan, heat canola oil. add garlic, ginger + chili paste & cook for ~1 min
stir stock, corn, shrimp & nam pla and bring to a boil. simmer for 15 mins.

whisk cornstarch, water + sesame oil in a bowl. stir in soup with egg. bring to simmer and cook for ~3 mins. stir in cilantro + paprika.

serve immediately and enjoy !!
chocolate strawberries
97 cals for 2 berries.

1/4 cup + 2 tbs semisweet chocolate
1.5 tsp raspberry liquor
1.5 tsp water 8 large strawberries
2 tsp white chocolate

line large baking sheet with wax paper. microwave dark chocolate, water and liquor.
stir and dip strawberries.

microwave whole chocolate. using a fork, drizzle over other strawberries.

chill & enjoy
