Tomorrow is a BIG day. My 1st attempt at cooking a brisket on my @WeberBBQAusNZ kettle. Brisket prepared, kettle ready. I’ve been warned it cld take 4 or 5 attempts before I get there, but if the Wright brothers had never wanted to fly, they would never have got off the ground!
#2ndhour checkin...Can really smell the mesquite wood chunks doing there thing. And the bark is developing nicely #BBQbrisket

Five hours in & a few to go for my 1st #BBQbrisket At this point I have added a cup (50% apple juice, 25% apple cider, 25% water mix) around the meat before wrapping it in foil and putting it back in for another 2 & a 1/2 hrs. Stay tuned, the proof will be in the tasting...
