i made "baked potato casserole" tonight but none of the web recipes were any good. here's how you're gonna make it
preheat oven, 400. 8 russet potatoes. wash. put on aluminum foil lined baking sheet, stab with fork, cover in canola oil, salt and pepper vigorously, bake 1 hour 15 minutes
meanwhile, cook 10 strips bacon. best way to do this: fuck a frying pan, use scissors to cut the bacon into bits, put it in the deepest pot you have and whargle it with a spoon on medium high heat until it's screwed
extract potatoes, cut clean in half, scoop contents into bowl. as you extract potato goop, put each skin into greased rectangular glass baking pan. when done, use scissors to cut each skin in half again so you can more or less flatten them all into the pan
add to potato guts in bowl: 1/2 stick butter, salt (to taste) pepper (to taste) chives (go nuts) green onion or onion powder (go nuts) cream (until smooth)
mix in a reasonable amount of cheese. add shred cheddar until it seems like there's enough in there
if you made enough bacon now's a good time to add a bunch of it to the potatoes
spoon potatoes on top of skins in glass pan, put in 350 oven for 30 minutes
it will be a mess and it will be tasty. there are lots of ways to improve this
i largely do not regret cooking without a recipe
