2. ROMAN PIZZA
This one is thinner and more crispy than Neapolitan pizza, but just as delicious. The crispiness is caused by the addition of olive oil to the dough!

3. PIZZA AL TAGLIO
This one surprises tourists quite a lot, as they usually don't associate pizza to a rectangular shape... but you can find it everywhere in Italy! It's one of our 'fast foods', often eaten on the go in between work hours. It's super soft!!

4. PIZZA A PORTAFOGLIO
Literally, 'wallet pizza'. This one's typical of the Neapolitan zone and it's rare to find in other parts of Italy. It's another example of 'pizza on the go', a small neapolitan pizza folded like shown in the picture

Now we enter the twilight zone. From here forward I'll list food that can be considered under the pizza umbrella but in truth they're their own things. Sooooo...

5. SFINCIONE
This is typical of Palermo. It's made with a soft bread called 'pane pizza' and garnished with tomato sauce, anchovies, onions and cheese

6. SARDENAIRA
This soft pizza is similar to the sfincione, but it's typical of Liguria and instead of cheese is garnished with ligurian olives (olive taggiasche). It's one of my favs and I always eat a slice when I visit the region!
