While in Uzbekistan I was most curious about 3 items- plov or pulao, somsa or samosa and kebabs and their link to the Indian versions. Here at a Bukhara tea house called Chaikhana I watched them make somsas. Interestingly they always bake them unlike india where we fry them.
Like the Russians, Indian Tea is very popular with Uzbekistan but drunk black with lemon and honey. Chaikhanas serve dumplings breads and somsas as snacks with Chai.
Uzbek family enjoys a meal. Uzbekistan has a large Tajik population who trace roots to Iran. Like India a distinct Persian influence is apparent. E.g the Somsa or Sanbosag in Persian. Unlike India the local influence is less -what you see is more akin to original Persian food.
