I discovered something new to experiment with in the kitchen thanks to Hill Country Lavender ( https://mcgeetraveltales.com/2020/07/11/hill-country-lavender/) out of Wimberley, TX and their Buzzed Butterfly ( http://www.hillcountrylavender.com/the-buzzed-butterfly) cocktail: Butterfly Pea Flower Tea.
This tea is made of blue flowers that are typically collected in Asian countries. The tea has an earthy flavor and is not my favorite. The best thing about this tea is not the flavor though, its the color.
Once brewed, this tea turns the water a brilliant deep blue, like an ocean in a glass. However, if you change the PH level by adding a bit of lemon or lime juice then the sapphire tea turns to amethyst.
Since this tea does not have the best flavor I have figured out that it is best to use as a dye. The Buzzed Butterfly calls for Lavender Butterfly Pea Simple Syrup ( http://www.hillcountrylavender.com/the-buzzed-butterfly). The only change I made was to double the amount of butterfly pea tea.
Once the lime juice is added the drink turns a nice shade of lavender. What I want to try is using butterfly pea tea as a dye in baking, a deep blue-purple sourdough ( https://thefeedfeed.com/fullproofbaking/butterfly-pea-flower-sourdough) sounds like a lot of fun!
