Also I know literally zero catholic men who are married and open to life who think it would be a good idea for them to become priests in such a hypothetical
1) Your latin rite parishes aren't structured to financially support a priest + his family, they can barely support a single unmarried priest even through merging multiple together
2) Your latin rite parishes are designed around the priest being dedicated and available for large portions of the day

Do you think you will be able to have the same number of masses, sacraments, classes, events etc if Father is married and has 5 kids under 5? Under 10?
3) Who's going to be able to come to the hospital in the middle of the night, or drop everything and rush to the scene of an accident to give last rites, if Father is at home watching the baby while his wife is at an appointment or visiting the in-laws?
4) Eastern and other parishes with married priests most often have to have the priests hold at least part-time secular jobs to help make the finances work.

Do you want father to be working part time in the world, in addition to raising the kids, and then the parish too?
5) This thread could go on and on, but I'll leave it with this:

Ask the faithful, reliable, trustworthy practicing men yoy know who are married with multiple kids.

Ask them if they would actually want to add a parish to their mental and physical demands.
