Sierra Leone has a remarkable history and like many countries on the coast of West Africa we were impacted by European expansion and the transatlantic slave trade.
This in turn led to an unprecedented intercontinental exchange of plant and animal species and perhaps the dawn of Afro-fusion cooking.
So many African staples were moved across the Atlantic Ocean to tropical America and it’s been wonderful to connect with so many #africanamerican #caribbean and #southamerican on social media
who have kindly shared their stories or adaptations of traditional African dishes and ingredients and how they are now part of another continents culture.  I can feel a food map coming on.
Maya Angelou said “The more you know of your history the more liberated you are”. The more you look the more intertwined and inextricably linked our histories are, and so, they must be taught holistically so that a well rounded whole experience is remembered.
There are two sides to every story and whilst Africa is the final frontier of food, its important to recognise it has been there since the beginning. #africa #africanfood #afrofusion #shwenshwenbymaria #shwenshwen #sierraleone #westafrica #africa
