Theory on how they might beat Salem:

Ok, so I think there are a few ways they could theoretically beat Salem,
1, Ruby could turn her to stone like she did the dragon grim at beacon or that giant grim in mistral, although...if that grim could break out there's no reason to belie-

ve that Salem couldn't do the same. Option 2, they collect all four relics summon the gods back and convince the light god that humanity won't always get along and he remembers him and his brother's fight that was caused by Salem and then realizes that even gods are fallible and-

Takes away her immortality and her magic and kills her then the light god without the dark god (because I remember him specifically saying the reuniting the relics we summon him and nothing about it also summoning his brother), and them he return magic to humanity once again.

Another thing, Summer is basically all but confirmed to have had silver eyes right? I mean we've seen her face multiple times all we need is for the show or show runners to just straight up say it.

Also I would be very upset if Qrow didn't somehow get Summer killed, weither it be via his semblance, or a kakashi and rin situation.
