There are many ways to make Chai. Between towns in Pakistan, India everyone has their own spin.

Here is how Waqas likes to make his Chai.

Ingredients & patience are the most important to me. We usually get these from Indian stores.

Ginger (Adrak), Cardamom (Elaichi), Fennel Seeds (Sonf), Cinnamon (Daar Cheeni), Tea (Red Label)

For 3-4 cups of chai. I’d add a bit more tea later.
Heating ~1.5 cup of water.
Gave ginger and cardamom a bit beating, and now letting it cook for 2 min or so. With lid on of course.

Depending on my day I wait for 2-3 min to add tea.
Added tea and now leaving it on for 3 min or so.
Once it’s here, time to add milk ~1.5 cup.

The secret is to let it cook slowly for 5-10 min now. Without getting it overcooked.
This is what’s going on now.
Those who take their Chai very seriously, stir it along the way. I have a special cup dedicated to it, sometime I use a large spoon for it.
Coming along quite well. Hard to express how it makes me feel with just an 😋 emoji.
Adding a bit of sugar (personal preference). Letting it cook for another 2-3 min, then it should be ready.
