The most obvious way to find new projects is to go at the "trending" tab on GitHub and checkout the hottest repos of the day.

You get a list of all kinds of topics/stacks/hashtags which you can follow. Once you star a few topics, repos tagged with these topics start showing up on your "explore" tab.
