Last night Google confirmed that there are indeed indexing issues. Apparently they're fixed now.

If you had a page that previously was indexed, and dropped out of the index, and GSC does not show anything odd re canonicalization this is likely due to the issues with mobile indexing. https://twitter.com/searchliaison/status/1311805475759902720?s=20
If you inspect a page in GSC and see that Google has chosen a random different page as canonical, this is a separate issue, but apparently this is resolved now too.
