I have only so much time to post my thorough speculations about the moveset of Steve, as both a smash and Minecraft player so here goes :

First some general thoughts, then move by move :

this character will be very weird, perhaps weirder than min min.
Some normals and tilt attacks will be the same on the ground and in the air and while walking, (similar to rockman Nair, jab, and ftilt)
...because that's how it works in Minecraft, attacks don't change based on movement, except their strength which I think is unlikely to be implemented (attacks while falling in Minecraft are critical and do 50% more damage, and while running do a lot more knockback)
At least one of the special moves will be multi purpose because we've seen too much stuff to fit in 4 special moves.

There's also a GUI involved to select blocks or tools, and maybe to see how many blocks Steve has (will be interesting as recovery)
Now for the moves :
• Minecart on tracks is the grounded side B, unlikely to be a dash attack although we haven't seen the dash attack, it reminds me of wario bike, Steve can jump from it like wario does and instead of becoming a hitbox it becomes a grabbox ;
• TNT with redstone trigger is the grounded down B ;
• Anvil is either the aerial down B or down air, even though we haven't seen a down air I'm thinking it's the down B because he can stand on it like pacman, and it seems very strong.
• the weak attack with sword is ftilt, which can be used while walking and while jumping like rockman and min min ;

(Btw these are the types of melee attacks in Minecraft : weak, strong, sweep, critical, and knockback)
• He can probably do up tilt while jumping because we see him do a gold axe swing upwards on the ground and in the air ;
• Swipe attack is the f smash ;
• strong attack with pickaxe is maybe his fair, maybe he can switch weapons but we didn't see him switch weapons ;
• Block placing might be neutral B or grounded Up B.
Unsure if he can place blocks in the air to recover, that would be balanced by the need to mine blocks and risk of running out of blocks

and just like min min, his up B will likely be different in the air vs on the ground ;
• The weak attack (sword) will be used for ftilt and nair and maybe also jab, there's a problem that most nair attacks hit on both sides, even rockman does. But that's easy to replicate, they can solve this exactly like they did with rockman ;
• The fishing rod is a tethered grab, might not be used as recovery (I hope) and likely to have a zair attack ;
• All or at least some of the throws will be using piston (it's easy to do, pistons can be placed in all directions in Minecraft. But it will result in very boring throws... Which has been done before, see mr game & watch) ;
• the flint and steel fire is down tilt , if he can just switch tools on the fly then it's also a down tilt ;

• we don't know what the shield will be or wether he can use the wooden shield from Minecraft (unlike link shield, Minecraft shield protects against melee attacks) ;
• we have not seen any projectile attacks. My suspicion is that having a bow and arrows and other projectiles will be too obvious and not creative enough as a DLC character, but if he does have a bow and or a shield, it might result in something similar to link ;
• Sakurai talked about the limited range of Steve's attacks in Minecraft, which is somewhat inaccurate, the effective range of melee weapons reaches farther than the visuals suggest (3 blocks)
And ranged projectile weapons reach even farther ;
This quote from sakurai might be a hint that this character doesn't have projectiles at all (not counting the minecarts )

Should have mentioned earlier, but here's the Steve trailer from Nintendo on YouTube :

• what will be the aerial version of up B ?
Maybe it's the block placing, maybe the block placing must be started from ground and is a grounded version of up B.
In Minecraft blocks cannot be placed by player in the air without adjacent blocks to place against ;
• years long ago I thought if Steve was added to Minecraft, his up B should be a teleport using ender pearls, but we didn't see that sadly 😅

• We have not seen his rolls and dodges, the rolls might be an enderpearl throw, most probably just linear movement like dark samus ;
• NEUTRAL SPECIAL and mining/crafting

the crafting table might be neutral B first step like villager planting a tree. Once placed, it is accessible withing a certain range and cannot be destroyed by opponents (it is not accessible, different Z axis plane)
• We have only seen Steve mine blocks from the ground , but an auto aim mining is not to be excluded (it makes no difference where he mines from in smash) so mining from ceiling and walls could be considered,
• if neutral B is a multistep move, how will player decide between mining and crafting ?
Sakurai seems to be going for an odd implementation :
upwards is for mining trees, so up tilt is an axe,
sideways is for attacking mobs (enemies), so f tilt and fsmash are a sword,
And down is for mining, so down B (?) Is the pickaxe ?
This would be sakurai's interpretation of Minecraft gameplay (which I assume he only played for a few months to create Steve for smash), rather interesting ;
• there will be no spawning food items on the stage, that's just clever editing from nintendo to make Minecraft references ;

• eating steak is likely one of the taunts ;

• another taunt is the head boppping ;
About the weapons and tools :

• in the trailer, zombie was shown using fsmash with empty hand. This could mean the weapons and tools wear down and break and we have to mine ressources and craft new weapons ;
• in Minecraft, the wooden axe is stronger than the iron sword, but it is also slower.
This makes the weak and fast up tilt (using wooden axe) very weird in smash ;

• the pickaxe is a very weak weapon however, so the strong fair with pickaxe also seems weird in smash ;
• Zombie was shown using wooden sword even though they can only spawn with iron sword in Minecraft, possibly just a visual difference in smash between the different alts ;

• The axe uptilt was only shown in wooden variant. I mistake the yellow glow of smash for the gold ;
• the pickaxe was shown as wooden for the zombie, gold for steve and stone for Steve when mining, so either the weapons can be changed or different alts have different weapons with sale properties , only visual difference ;
• the visual difference speculation is further strengthened by Alex having a diamond sword and iron pickaxe for fair attack.
All alts seem to use stone pickaxe for mining resources.

Perhaps sakurai wanted to represent multiple tiers of weapons randomly in a pure visual way ;
Miscellaneous :

• there are at least 3 different steve alts in smash, enderman not having any alt in Minecraft but zombies having quite a few.
The default Steve skin in smash is from the original Minecraft, which is slightly different from Minecraft mobile and console.
• Alex is technically the same character model just with slimmer arms.

For smash, there seems to be 3 to 5 Steve skins with default model, 1 or 2 "slim" skins including Alex , 1 or more zombie skins and 1 enderman.
(The pigling is a very new addition to Minecraft and I'm quite pleased it wasn't shown in the trealer)
• The sleeping animation is the same that was shown when Steve slept in a bed ;

• if Enderman was echo fighter, his rolls and dodges could be teleport, and as taunt he could reveal is true height like Ridley
• sakurai said there was no voice to be added, but there could be the distinct hurting sound from Minecraft, whenever Steve gets hit ;
In conclusion, Nintendo often leaves out outrageously important details from these trailers, details that could sometimes start bad speculation...
Such as thinking something will be over powered before actually seeing it and using it first hand (placing blocks to recover) ;
