First of all shout out to @n2ckchong for his initial thread on how to mint $EMN without buying it on Uniswap - it was a great help
I'll do a step by step on what worked for me below:

(This entire thread is assuming you already have $EMN and wish to mint eTokens with it)
1- Open the $EMN contract on Etherscan
2- Go to Write Contract & connect your Web3 wallet
3- Find the Approve section and paste your wallet address & enter the amount of $EMN you wanna spend

4- Navigate to the eToken contract you wanna mint (I did eYFI) and open the Read Contract tab
5- Find 5. calculateContinuousBurnReturn
6- Enter the amount of $EMN you wanna spend on $eYFI followed by 18 0s & hit Query
7- Copy the number it then displays once finished loading

8- Scroll up and click the Write Contract tab
9- Connect to Web3 wallet
10- Scroll to 5. Buy and enter the _amount of $EMN you wanna spend on $eYFI followed by 18 0s
11- Paste the number we copied earlier in _min and then delete the last 2 digits

12- Deduct 1% of this number
13- Press Write

If the gas fee is insanely high, reject the transcation and delete the last 2 numbers from your _min amount
If the transaction still has insane fees just repeat this process until it looks normal

I'm by no means new to crypto but this was my first time actually interacting with Etherscan in this way so this might not be the most efficient or simple way to do it
