So... it's Duck Egg Sponge Cake Day!!! But first some history... My Grandmother was pretty much the best cook and baker on the West Coast... Every week she had Tuesday night tea for any family who were there... not us - we lived in Whangarei... but if we were visiting...
We always looked forward to Tues night tea... I think when we were there there was always dessert! But there was definitely always a roast. So tonight my cousins (much younger than me!) are doing a roadie in their van from Napier to Auckland via Tauranga...
And they were originally coming tomorrow - which is Tuesday... So... Tuesday night tea - today - because they are coming early...
So... My Grandma (who passed away nearly 4 years ago) always always ALWAYS made a sponge - with jam & cream in the middle and icing sugar on the top. I don't actually know how she made it - if she dropped it or not - it was just always sitting there in the morning ready for cream
So... what better way to try out my beautiful duck eggs from @katjnz ... which were sent for a bit of a homeschooling project...
First we floated them... all lying on their sides... nice! SUPER fresh! We noticed how hard the egg shells were to crack... and the egg whites are absolutely perfectly clear - not yellowy like a chicken egg. Then we played a quick round of fertilised or not - 2/4 were.
Then we noticed that it took much much longer to get the egg whites stiff compared to the chicken eggs we used for our Sponge on Friday... But we kept beating and they whipped up.
And now, they are in the oven and rising absolutely perfectly and my house smells just like Grandma Jean's. Yes we will be dropping them!!! Just from knee-height!
