I missed that whole Davey Jones/Thanos thread. As to which was more realistic...

I'll have to say that ILM did a great job on the skin of David Robert Jones, but the shader department, and animation rigging really had a challenge with the eyes. Always the key.
Here is an earlier ILM test for the David Robert Jones character (was that in Pirates?) in which the eye shader writers were clearly sipping a little too much from grandma's jug.

More early tests for Pirates — ILM's viewpaint team proposed many different color schemes for David Robert Jones character (portrayed by Bill Nighy in a motion capture suit on set) before settling on something more aquatic.

The last picture clearly shows a toon shader look.
More early ILM work for Pirates and David Robert Jones — since his character was the keeper of the Dead Man's Chest, it was important that the costume implied a lot of aquatic sea life.

This version was considered too stylized.
The film production of Pirates 2 was concerned that ILM could not pull off the CGI character eyes for David Robert Jones, and as a backup put eye makeup on the performance actor on set - expecting to mix it with a CGI body.
ILM developed a new technology for Pirates2 called iMocap — which allowed an actor on-set to play David Robert Jones character, captured by simpler witness cameras, and avoid recreating performances later in a motion capture stage.

The actors felt silly in the costumes at first.
With any CG character creation, there are accidental bloopers that happen during render time. Despite all the planning for David Robert Jones in Pirates2, ILM's computers would sometimes just get the render incorrect - to hilarious result.

I greatly admire the work of David Bowie, and as for the incredible work by the artists on the CGI Davey Jones, in Pirates of the Caribbean 2 — it stands alone in its achievement.
