It’s easier, requires less labor (so you can evict any lingering tenants), marketing is easier (just sell to the coop, no need to care about a lowly customer), it allows for lots of big equipment operation (a top priority cuz it’s fun), and you get time off in winter.
Farmers deserve flack for choosing to grow corn and soybeans over food. there are many reasons/justifications/excuses for doing it, but farmers undeniably have a choice. They could grow anything they want on land they own.
