Tapi korang tahu tak topping yg atas Takoyaki yg mcm kulit bawang tu, apebende sebenarnya?

Benda tu sebenarnya adalah ikan tuna yg disalai sampai kering, dan dihiris halus.

Nama Jepun dia (sebab benda ni mmg makanan Jepun pun) adalah katsuobushi. Nama antarabangsa dia pulak adalah bonito flakes.
Recently aku had an opportunity utk visit kilang production katsuobushi ni dan tengok sendiri how is it manufactured.

Very interesting process. Fyi, industri ni masih retain traditional method dlm pemprosesan diorang, to ensure originality and quality.

Jepun punya standard.
Raw material adalah smoked tuna. Dalam gambar ni adalah skipjack tuna yg ditangkap di kepulauan Flores dengan "pole and line" fishing method, a sustainable way of fishing.

Lepas ditangkap, tuna ni disiang dan disalai for 1-2 months to remove moisture and enhance flavour.
Sebelum process flaking, smoked skipjack tuna tu kita steam dulu supaya dia soften a bit. Kalau tak, keras mcm kayu, rosak habis flaking blade.

Time steam ni, bau ikan naik semerbak harum, sampai kat depan kilang ada kucing datang. 🐈
Ini adalah one of the machines yg digunakan utk flake tuna td. Machine ni is used for almost 50 years, and in Japan, there are similar machines that's much older.

Mechanism dia simple je; masukkan tuna, dan end product (bonito flakes) akan keluar.
After flaking, sorting and packaging is done. Very simple and straightforward.

One great thing about katsuobushi ni adalah it's highly nutritional, and free from any additives and flavourings.

Usage pun sangat luas, not just as Takoyaki topping.
Katsuobushi in Japan is one of the "dashi", atau dlm bahasa kita, perencah utama bagi pelbagai masakan.

Tp yg bestnya, makan dengan nasi panas2 sedap, masuk dlm Maggi sup sedap, makan camtu je as light snack pun sedap. Berkhasiat pulak tu. Highly versatile. Kah!
Also, processing facility yg aku visit tu adalah yg 1st in Malaysia. Sebelum ni, bonito flakes semua import yg dah siap je.

The product is processed in accordance with strict SOP and high standard.

The product is also certified Halal, dan quality mmg jauh beza w other Bonito flakes in the market, especially ones from China yg murah dan guna artificial flavour n colourings. Kah!
