Anyhoo, I’m going to make a kind of cheat’s tonkotsu stock today (cheating because I have no pigs feet which yes, is very wrong.)

Starting off by burning some spring onions and ginger in a dry pan.
Having a go at getting some black patches on these bones too.
I have this hunk of pork back fat here, which is going to help things along no end.
Everything but the back fat in, plus two dried shiitakes and about five litres of water. Ready to bring to the boil, and then do a light skim of only the grossest stuff that comes to the surface (we are NOT going for a technically perfect, clear stock here. No siree)
