You wanna learn how to make the famous Cate Spice(y) Chicken Wings?

First up, you’re gonna need 6-8 medium potatoes, preferably agrias.
Also a large clove of garlic and 3/4 cup of olive oil.
Halve the large potatoes, then drop into boiling water for 10-12 minutes - until the exterior starts to soften.
Pour the olive oil into a steel pan. Slice the large clove of garlic and drop into the oil.
Place into a preheated (200°C) oven and fry until golden brown.
When the spuds are done, give them a hard shake in the pot to rough up their exterior.
Then slice into wedges.
Remove the hot oil from the oven, place the wedges in, then baste thoroughly.
Cover lightly with freshly ground pepper, then lash with garlic salt.
You’re going to bakes the wedges at 200°C for 90min, basting thoroughly every 30 min.
Next is the wings prep!
For the baking sauce, you’ll want 1/4 cup of wing sauce (whatever you like the taste of), two heaped tbsp of smokey bbq hot sauce, a big dash of lime juice and two tbsp of tomato paste.
Put in a pot and simmer and stir until mixed. Rub mixture thoroughly into the raw wings.
Bake for 90min in the same oven, basting every 30min. If they start to blacken, cover with foil to prevent burning.
Onto the last step of prep!
Mix together a HEAPED tbsp of aioli with a 3/4 cup of lite sour cream.
Pour half into a decorative glass dish and decorate with your fried garlic chips, chilli seeds, parsley and chives.
Four the final sauce step, mix together:
- 1/4 cup Wings Sauce
- Generous splash of lime juice
- Tbsp of smokey bbq sauce
- 2 tbsp of VERY HOT SAUCE
- Splash of red wine vinegar
- 2 pinches of raw unsweetened cocoa powder
Microwave until steaming and you mace your kitchen.
Lastly take a squirt of hot wedges oil before playing and mix into the sauce you just made. Mix it in well.
Plate your wings in a decorative fan, then drizzle generously with the sauce.
Plate wedges, add lime wedges, sprinkle chives and cut parsley on your wings 🌶🍗
Don’t forget to hit your wedges with flakey sea salt to taste!

FOR VEGETARIANS: Use the baking sauce to marinade chunks of tofu that you’ve dotted with a fork. Marinade for 4-6 hours, then bake exactly like the chicken.
Many wing sauces are dairy free, which is handy!
Also for the dip replacement, coconut yogurt and a crushed clove of garlic, whisked with a drizzle of olive oil, works well.
