okay, let's compare this:

between season 1 and season 3 we can see a lot of changes, and one of them is Gilbert's behavior.

season 1 Gilbert was so confident and bold. He showed his interest in Anne and tried to catch her attention so easily, without any complication.
let’s talk about season 3 (bonfire scene) Gilbert:

as you can see here,Gilbert is not as bold as before. Looks like reality just hit him in the face and his heart is now the one who is talking. He has a lot of emotions and he can only express it with his eyes. He can’t even talk
we can see he doesn’t know what to do, we can even feel how nervous he's just for the way he looks at Anne. I think he’s trying to realize everything, but in that moment is just her and he can’t think of anything else. He looks so in love, scared and confused
"can i speak with u please?" Anne looks so confused too, trying to think but at the same time not thinking of anything, you know what I mean? she was celebrating but seconds later Gilbert appears and seems so fragile,, basically they’re there but at the same time they're NOT
Gilbert tells her everything and Anne is trying to understand but she just can’t. Suddenly she has NO WORDS, why is he thinking too much? he has ALL THE OPPORTUNITIES, he should be happy,not confused. she’s trying to ignore the feelings she's figuring out she has for Gilbert just
for a second. she's focusing on his happiness and future. This is so heartbreaking, and she KNOWS IT. "You don’t want to be a country doctor. The Sorbonne is your dream...Winifred is lovely and her parents are supportive. I don’t understand, what’s holding you back?" I-
they know but they DON'T KNOW at all, and then it happens. "just one thing" he realizes it out loud and then she realizes it. Both of them seems so surprised, confused and the only way they’re trying to express everything is by their EYES. Anne CLEARLY DOESN'T KNOW WHAT TO SAY
this is important: Gilbert finally opened his hEART, but she was so confused and ended up saying "no" basically. SHE LOVES HIM SO MUCH to the point where she really thought later she didn’t want to "take away his dreams" just for her
Gilbert's eyes can express how much he LOVES HER but his eyes can express also how HEARTBROKEN is he right now. Anne is waiting for Gilbert to say something and Gilbert is waiting for Anne to say something, but she looks so confused and scared, and he looks so sad and scared.
their language are their eyes and they’re waiting for something, but seconds later they’re not alonE ANYMORE. "I’ll be off then." She's not paying attention to her friends, and he's not paying attention to anything at all. :(
"good night." Anne is about to cry and Gilbert turns around to see her again one more time. she’s trying so hard to understand what just happened, and he’s trying so hard not to seem heartbroken but he is, and she is
this scene can be exciting and heartbreaking, with a lot of emotions at the same time, but it’s also the scene where their eyes and their hearts expressed everything. Gilbert finally realized "it always has been, and always will be you"
that was the moment where he tried to unburden his heart. And for Anne, that moment helped her realize that her feelings for Gilbert were deep and real "I'm sorry, I was confused before. I’m not anymore"
that was the moment they realized how much they loved each other. Literally that moment was the missing piece for Gilbert and Anne
