I think one of the most important things to accept when trying to get better at cooking is that it's very likely that a tremendous amount of the 'common knowledge' you've been taught is just flat out wrong.
Some of it is just because things were just once true, either because of different cooking tools, modes of storage, how ingredients used to be, etc

If you learned from parents/grand parents, and they've "always done something that way" fair chance something about it is bullshit.
This isn't to say that old recipes are bad or anything.

Just that it's only been VERY recently that the science of cookery has blossomed, and a lot of old wisdom has actually been rigorously tested.

Cooking vids that help you build mental models of how shit works instead of just following recipes. As well as banishing some kitchen superstitions.
