Good Evening people of Twitter, tonight I am going to bring your another installment of @danielmkim’s thread #cookingforlieutenants! Tonight we are making my mother’s Minestrone Soup recipe!
This isn’t your everyday Minestrone, in addition it has Italian Sausage in it. Yes I know it’s not 100% authentic but it tastes amazing! #cookingforlieutenants
You will need the following ingredients!
1 can diced Tomatoes, 2 small zucchini, 1 onion, 2 cups shredded cabbage, 1 package of Italian Sausage links (hot or mild), 1 cup of diced carrots, 3 cups of beef broth, (cont)
(Ingredients Cont) 1 can of small white beans, basil, oregano, minced garlic, and olive oil #cookingforlieutenants
Step 1 (Prep)
Finely dice your onion, carrots, zucchini. Throw the Italian sausage links in the freezer for about an hour so it’s easier to remove the casing. #cookingforlieutenants
Step 2
Over medium heat put about 1 tbsp of olive oil in the soup pot. Add the minced garlic and let it heat up until you can smell the garlic in the oil. Be careful not to burn the garlic. Then add the onions and sauté until they are translucent
Step 3
Add the diced Italian Sausage and cook until browned #cookingforlieutenants
Step 4
Added the diced carrots and zucchini. Cook for about 5 minutes and then add the can of diced tomatoes and cook for another 5 minutes. #cookingforlieutenants
Step 5
Add a dash or two or oregano and then add your 3 cups of Beef Broth. Boxed, canned, or bullion it all works. Personally use bullion because it takes up less space. Stir everything up and then add a dash or three of the dried basil. #cookingforlieutenants
Now stir everything up, cover and turn the heat down to about a 2. Simmer the soup for 30 minutes stirring occasionally.
Step 6
Add the 2 cups of diced cabbage, stir, cover, and cook for another 30 minutes. #cookingforlieutenants
Step 7
Drain your can of small white beans and add to the soup. Simmer for 20 minutes and then serve. #cookingforlieutenants
This soup is extremely tasty and filling. Most of it is done by taste, so if you like a little more garlic or basil...it’s your call. #cookingforlieutenants
Your best bet is to make it the night before, and then let the pot sit in fridge overnight. Don’t get me wrong it’s awesome fresh, but it’s almost like the flavors meld even better overnight. #cookingforlieutenants
