Thatcher Demko is a 24-year-old rookie. He had a .922 Sv% in the AHL in 2018. He had a .935 Sv% in the NCAA in 2016.

The NHL's goalie progression timeline is completely ridiculous.
Rookies with 10+ GP:

Blackwood (23), Merzlikins (26), Demko (24), Samsonov (23), Hoberg (25), Montembeault (23), Hill (24), Dreiger (26), Shesterkin (24).

Their ages span 23-26. Peak age for goalies is around 26-27.
By the time goalies are allowed to play regularly in the NHL, they are generally nearing the absolute peak of their ability.

This isn't always the case (Tim Thomas), but it is often the case.
People often reference goalies that play a long time as counterarguments. Just realize that Luongo, Roy, and Brodeur all had their best NHL season at age 24. Many NHL goalies aren't even in the NHL yet at that point.
