So analyzing episodes 5, 7, 12, 13, 15, and 16...
I've come up with a pretty clear timeline regarding Amity's feelings towards Luz. Strap in this is a thread:

Episode 5:
Amity clearly doesn't like Luz. To her, she was a trespasser on school grounds, was a main factor in getting her top student badge taken away which is implied to be like a comfort object to her, and thinks she can just become a witch easily. >>
Amity says she has been working her whole life to get to the top so seeing Luz thinking she can become a witch just like that angers her. When she sees Luz cheated, we as the audience know Luz didn't intend to cheat, instead Eda set it up without Luz's knowledge. >>
Amity doesn't believe Luz which makes sense considering their last interaction. Now we get to the scene where Amity is in the dark corner and Luz talks to her. Luz shows her the light spell and Amity is obviously surprised but puts her aloof facade back on for a moment >>
However this is when Amity gains respect for Luz. She doesn't like her, but she has respect and no longer thinks she's trying to cheat her way into becoming a witch and that she is taking it seriously >>
Episode 7:
We've established Amity has respect for Luz but still doesn't like her. In episode 7, Luz sees Amity with her walls down when reading to kids and wants to befriend her. Amity doesn't want anything to do with Luz again considering their last few interactions >>
Unlike other bubbly characters, Luz actually respects Amity's boundaries. Amity recognizes this as Luz immediately backs off from bothering her when Amity tells her to leave her alone as we can see her reach her hand out for a moment >>
(something I'd like to point out too and this will connect with a point later on)
When Luz is talking about doing voices while reading the book for a split second we can see Amity have a small smile. It's not for a single frame too, it's animated, albeit for a short second >>
Fast forward to when Luz and the twins enter the hideaway. Again, i'd like to emphasize that Luz WANTS to respect Amity's boundaries. She was taken into the hideaway without being told before hand it was Amity's. She immedately closes the diary and tries to put it back>>
HOWEVER we must also consider Amity's pov. Amity walks in and just sees this girl that seems to cause misfortune for her whenever they meet, on top of teaming up with her siblings, holding her diary with open pages. Amity then calls Luz "a bully". >>
Hypocritical? Yes. Is it believable she feels this way? Yes.
Getting your privacy invaded really sucks, she expects this from her siblings cause SIBLINGS. (and this might be a stretch but) perhaps Amity thinks Luz did it out of spite/revenge for Amity wanting to be alone >>
Let's fast forward to during the otabin battle and THAT scene. Yknow the one.
Remember when I pointed out a small smile that forms on Amity's face for a second? It was when Luz was talking about doing voice while reading. Almost like Amity found her charming/cute/funny.

The laugh scene.
Amity laughs at Luz (and gives that lovey dovey looks that says: i'm gay for you) when Luz does something that's just her being HER. When they are in danger Luz manages to make Amity laugh. This is very important. >>
Not to the end of the episode. Amity says the following "Maybe you aren't a bully, I haven't exactly been the friendliest witch either. I'll think on that."
Amity's pov has been challenged and she decides to reflect on Luz and her own behavior. This is a HUGE turning point >>
