While multiple exchanges across globe are delisting privacy coins like #XMR, #ZCash etc...but each one of them have kept #XVG to be available to their users ? Why ?

Because @vergecurrency provides privacy as a choice... which makes it fall to both public and private. Users are independent to choose what type of transaction they need and exchanges are free to choose as well.
