With the now perfected homemade Sausage and Egg McMuffin, I am no longer beholden to those arbitrary boundaries of breakfast that other mortals are subjected to.
If anyone wants to know, here's how to do it.
1. Get Warburton's muffins – don't go for the cheaper home brand. Don't cut them, tear them (hold in both hands, put fingers in and tear carefully into even halves) – this gives you the rougher surfaces when toasting.
2. This is the cheat. These are just right, from Tesco, turn your grill on, get them up right under it, and grill on one side for about 5 minutes until starting to brown.
3. For the egg, you need a decent pan with a lid and one of these egg rings. Melt a small amount of butter in the microwave and the brush the pan and the egg ring. Heat the pan and crack egg in and break the yoke (important). Pour a cup of water outside of the ring & put lid on.
This gives you the bain-marie that cooks the egg from the top and bottom.
4. Turn the sausage over and put the muffin halves on the tray to toast too. Cook the sausage for another 4-5 minutes and take the muffins out when toasted.
5. Butter muffin lightly with butter brush and melted butter. Get some proper fake cheese slices. Not Dairylea, the cheap own brand yellow ones. Put cheese on, then sausage patty, then run a spatula around the egg ring and get the egg out and on. Voila. Tastes *exactly* the same.
