This is finally happening tonight.

Wagyu beef time.
I've never trimmed something like this before but my gods is this a gorgeous piece of beef.

Smells amazing as well.
Lookit those there STEAKS!
Ohhhhh god.
Ohhhhhh my fuuuucking god.

I am ruined.
Note, I used no oil or butter in the pan. That glossiness is -just- from the steak's own fat.
Test Steak turned out great. But it's super rich.

To pair with it I made potatoes in a mustard scallion vinaigrette, and a salad with cherry tomatoes, corn, pickled onion and cucumber in a suuuuper light version of a caesar dressing.
