The first dish you can learn to make at home is super easy (but it takes a long time). It’s called Harira.
A thick soup often served during Ramadan and in winter.
It’s mainly based of:
- Tomatoes
- Celery, carrots, potatoes
- Lentils
- Chickpeas
- Vermicelle
- Spices

The second dish you can make is called olive chicken
You can make it in a tajine or a pressure cooker.
It’s super delicious and fresh and best served with homemade bread

Couscous: the food so nice they named it twice!
The best thing about this dish is how versatile it is. You can add as much or as little veg as you want and you can change the meat according to your preference too. Every family has a different couscous recipe !

Msemen: you can make these pastries for breakfast or as a snack (they take time!) and they are delicious served with butter and honey or jam (or Nutella

Harcha are super simple semolina cakes that you can eat with butter, honey, jam or Nutella. They take less than 30 minutes to prepare and are totally delicious

Kefta is another dish you can prepare in a tajine. They’re basically meatballs in a spicy tomato sauce. I served them with a Moroccan salad and batbout (bread) here.
Pastillas are one of my favourite meals to make. It’s slow cooked chicken and almonds in a flaky pastry topped with icing sugar and cinnamon. These took me a long time to get right but they are just...

Cornes de Gazelle are my FAVOURITE biscuits to make. They are difficult to prepare at first, but once you get the hang of it you won’t stop. I love eating these and drinking atay, but I get such a sugar rush from it all

You can very easily make briwats at home. You only need a couple of ingredients and they are ready in just minutes once you get the folding technique down! I definitely recommend you check these out if you want to prepare something yummy in a flash

Last but not least, Baghrir. These are little pancakes that are made with a lot of shaking and baking powder to get those funky holes in them. Super yummy with butter and honey
