After you've chosen the technology you want learn and work with, don't be too concerned about knowing all the previous versions. It's not a book series where each new release builds upon the previous one. Feel free to leapfrog to the latest version.
The main cost of starting with the latest and greatest version is that you will probably have less documentation, books and tutorials for it. But you also can gain a competive advantage of learning the new hotness.
Also, from a business perspective, learn about how widely adopted various versions are. Java 15 might be the latest Java version but most developers are still using Java 8 including me, lol
When in doubt and especially for a "newer" language (less than 4 yo? ) , I'll tend to use the latest stable version of it.
A good way to get stats on technology adoption is to look out for those slick survey reports that a lot of vendors put out every year. Dzone, Jetbrains, Github come to mind off the top of my head but there are a bunch more. Good luck on your journey #codeblooded
